Weekend Fitness Challenge

Here's a great fitness challenge for all of us to do this weekend. I've been struggling for the past few days to eat right and to exercise. This looks like exactly what I need to get me started again!

Fitness Facts


Why is it that I know all of this and believe all of this but yet struggle trying to "fit" exercise into my "busy" schedule? Am I really that busy that I can't allow myself 30 minutes a day to do something that will benefit every area of my body?

Kathie's Zucchini Muffins


  • Ingredients:
  • 4.75 ounces whole-wheat flour (about 1 cup)
  • 3 ounces all-purpose flour (about 2/3 cup)
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/3 cups shredded zucchini
  • 1/2 cup fat-free milk
  • 2 tablespoons canola oil
  • 2 tablespoons honey
  • 1 large egg
  • Cooking spray
  • 1 tablespoon sugar
  • 1/4 teaspoon ground cinnamon
Directions:

Preheat oven to 400°. Weigh or lightly spoon flours into dry measuring cups; level with a knife. Combine whole-wheat flour and next 6 ingredients (through salt) in a large bowl; stir with a whisk. 

Combine zucchini, milk, oil, honey, and egg in a small bowl; stir until blended. 

Make a well in center of flour mixture; add milk mixture, stirring just until moist. Spoon batter into 12 muffin cups coated with cooking spray.

Combine 1 tablespoon sugar and 1/4 teaspoon cinnamon; sprinkle over tops of muffins. Bake at 400° for 15 minutes or until golden. Remove from pans immediately; cool on a wire rack.

Infused Water



Stuck with leftover grapefruit from breakfast, and a lemon wedge sitting in your fridge untouched? Make the most of your leftover citrus fruits and make fruit-infused water. It’s pure. It’s natural. It’s calorie free. And it’s the perfect refresher! Enjoy!

Ingredients:
-Pitcher filled with cold water
-1/2 large lemon, juiced
-1/2 large grapefruit, juiced
-5 mint leaves

~Simply squeeze the lemon & grapefruit juice into the pitcher with the water. Add fresh mint leaves for extra flavor & decoration. Chill & serve!

Sprouted Grain Bread



Sprouted Grain Bread

Ingredients:

4 cups sprouted whole-wheat flour
1 tsp salt
1 1/2 cups lukewarm water
1 1/2 tsp yeast

Directions:

Mix and knead together all of the ingredients, adding more flour if needed to make a dough that is cohesive. Dough will be a little stickier than other bread doughs. If using a stand mixer, knead at a low speed for 6-8 minutes. If kneading by hand, knead a little longer on a floured surface.

Transfer the dough to a bowl and press a piece of plastic wrap onto the surface. Cover the bowl with a damp towel. Let dough rise in a warm place about 1 to 1 1/2 hours.

Shape the dough into a loaf and place into a non-stick loaf pan. Cover again and let rise for another hour or until the dough has risen above the top of the pan.

Bake the bread in a preheated 375 degree oven for 35-40 minutes. or until nicely browned. Remove from the oven, allow to cool for approx. 10 minutes. Turn it out of the pan and cool completely on a wire rack before slicing.

Fruit and Veggie Wash


With so many chemicals in pesticides and manufactured fertilizers, the food we eat should always be thoroughly washed prior to consuming. There are so many good "recipes" for making your own wash, there is no need to purchase those in the stores that are not only expensive but probably have ingredients that are not even necessary. The Healthiest Meal of the Day

Tracking Your Measurements


One of the ways to "measure" your weight loss is by tracking your measurements. Measurements are a better indicator as to how your body is changing. The scale is not the best indicator since fluctuations happen constantly. If you need to step on the scale, try to do so once a week, at the same time and wearing the approximate same clothes (or go in your birthday suit). This will be a little more accurate but not as much as your actual body measurements are.

Baked Grapefruit


Baked Grapefruit

Peel and section your grapefruit as you would an orange. Sprinkle generously with cinnamon (can also add a pinch of nutmeg and/or cardamom). Bake 20 minutes at 375. While it was still hot, I sprinkled a packet of Truvia over the top.
